  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup milk (evaporated milk works great)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Peel and cut sweet potatoes into chunks. Boil until tender (about 15 minutes), then drain and mash until smooth. Measure out 2 cups.
  2. In a large bowl, combine mashed sweet potatoes and softened butter. Beat until smooth.
  3. Add sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until creamy and well blended.
  4. Pour the mixture into your unbaked 9-inch pie crust.
  5. Bake at 350°F (175°C) for 50–60 minutes, or until the center is set and a knife inserted near the middle comes out clean.
  6. Let the pie cool for at least 1 hour so it can fully set. Serve plain or with whipped cream.
