- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup milk (evaporated milk works great)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Instructions
- Peel and cut sweet potatoes into chunks. Boil until tender (about 15 minutes), then drain and mash until smooth. Measure out 2 cups.
- In a large bowl, combine mashed sweet potatoes and softened butter. Beat until smooth.
- Add sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until creamy and well blended.
- Pour the mixture into your unbaked 9-inch pie crust.
- Bake at 350°F (175°C) for 50–60 minutes, or until the center is set and a knife inserted near the middle comes out clean.
- Let the pie cool for at least 1 hour so it can fully set. Serve plain or with whipped cream.
