Instructions

  1. Preheat oven to 175 °C (350 °F). Line baking sheets with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar: In a large bowl, beat softened butter and sugar until light and fluffy (about 2–3 minutes).
  4. Add eggs and flavoring: Beat in eggs one at a time, then add vanilla or almond extract.
  5. Combine: Gradually add dry ingredients to the wet mixture until a soft dough forms.
  6. Chill dough: Cover and refrigerate for 1 hour to help cookies hold their shape.
  7. Shape cookies: Roll dough out on a floured surface to about ¼ inch thick. Cut into shapes using cookie cutters.
  8. Bake: Place on prepared sheets and bake for 8–10 minutes, until edges are lightly golden.
  9. Cool and decorate: Let cookies cool completely before frosting or decorating.

Notes

  1. Don’t overbake the cookies should stay soft and light in color.
  2. Chill dough well before rolling to prevent spreading.
  3. For crispier edges, bake an extra minute or two.
