- 1 cup shredded coconut (plus more for rolling)

- Prep the pineapple: Drain the crushed pineapple well using a fine mesh strainer. Gently press out excess liquid it should be moist but not watery.
- Mix the filling: In a mixing bowl, beat softened cream cheese until smooth. Add powdered sugar and mix until creamy. Fold in the drained pineapple and 1 cup of shredded coconut.
- If too soft to roll, refrigerate for 30–60 minutes to firm up.
- Form the balls: Scoop about 1 tablespoon of mixture per ball and roll between your palms until smooth.
- Coat in coconut: Roll each ball in shredded coconut to cover completely.
- Chill: Place on a parchment-lined tray and refrigerate for at least 1 hour before serving to help them set and intensify the flavor.
