Instructions

  1. Prepare the Base Mixture
    In a large bowl, beat together the peanut butter, softened butter, and vanilla until smooth and creamy.
  2. Add the Sugar
    Slowly incorporate the powdered sugar until a thick dough forms. If too soft, add a bit more powdered sugar.
  3. Roll into Balls
    Scoop about 1 tablespoon of dough, roll into smooth balls, and place on a parchment-lined tray.
  4. Chill
    Refrigerate for 20–30 minutes to firm up the mixture.
  5. Melt the Chocolate
    Microwave chocolate chips with coconut oil in 30-second intervals until smooth and glossy.
  6. Dip the Balls
    Coat each ball in melted chocolate using a fork. Let excess drip off and return to the tray.
  7. Set and Serve
    Chill again for 15–20 minutes until the chocolate sets. Enjoy!

Notes

  1. Powdered sugar helps the mixture firm up don’t substitute with granulated sugar.
  2. If your mixture cracks while rolling, warm it slightly between your hands to soften it.
