- 1 pound ground beef
- 1 packet taco seasoning
- 3/4 cup water
- 1 (15 oz) can refried beans
- 1 (10 oz) can enchilada sauce
- 1/4 cup diced tomatoes
- 1 1/2 cups shredded Colby Jack cheese
- 8 taco-sized flour tortillas
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet over medium heat, brown ground beef, breaking it up as it cooks.
- Stir in taco seasoning and water. Bring to a boil, then reduce heat and simmer until most liquid is absorbed.
- Heat half of the oil in a large skillet or griddle. Crisp tortillas for 4–5 minutes, flipping until golden. Add more oil as needed.
- Spread 1/4 cup refried beans over 1 tortilla, then top with a layer of seasoned beef.
- Place a second tortilla on top. Spread 2 tbsp enchilada sauce over it, then sprinkle with diced tomatoes and shredded cheese.
- Transfer pizzas to a baking sheet. Bake for 8–10 minutes, until cheese is melted and everything is hot.
- Slice into quarters and serve immediately.
Notes
- For extra spice, use a hot enchilada sauce or add sliced jalapeños.
