Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 1 (15 oz) can refried beans
  • 1 (10 oz) can enchilada sauce
  • 1/4 cup diced tomatoes
  • 1 1/2 cups shredded Colby Jack cheese
  • 8 taco-sized flour tortillas
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown ground beef, breaking it up as it cooks.
  3. Stir in taco seasoning and water. Bring to a boil, then reduce heat and simmer until most liquid is absorbed.
  4. Heat half of the oil in a large skillet or griddle. Crisp tortillas for 4–5 minutes, flipping until golden. Add more oil as needed.
  5. Spread 1/4 cup refried beans over 1 tortilla, then top with a layer of seasoned beef.
  6. Place a second tortilla on top. Spread 2 tbsp enchilada sauce over it, then sprinkle with diced tomatoes and shredded cheese.
  7. Transfer pizzas to a baking sheet. Bake for 8–10 minutes, until cheese is melted and everything is hot.
  8. Slice into quarters and serve immediately.

Notes

  • For extra spice, use a hot enchilada sauce or add sliced jalapeños.
