Instructions

  1. Preheat the oven: Set to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Sauté the vegetables: In a skillet, melt butter over medium heat. Add onions (and celery, if using) and cook until soft and translucent, about 5–7 minutes.
  3. Mix the dressing: In a large bowl, combine the crumbled cornbread, sautéed veggies, poultry seasoning, salt, and pepper.
  4. Add wet ingredients: Stir in the beaten eggs and 2 cups of broth. Mix gently, adding more broth until the mixture is very moist but not soupy.
  5. Optional creamy version: Stir in the cream of chicken soup for a richer texture.
