  • 4 cups broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup red onion, finely diced

For the Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Blanch or prep the broccoli
    Blanch the broccoli for 1–2 minutes and shock in ice water for extra color and crunch or leave it raw for maximum crispiness.
  2. Prepare the dressing
    Whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until the mixture is smooth and creamy.
  3. Assemble the salad
    In a large bowl, combine broccoli, diced Honeycrisp apple, dried cranberries, nuts, and red onion. Pour the dressing over everything and toss gently to coat.
  4. Chill and serve
    Refrigerate for at least 30 minutes so the flavors meld. Garnish with extra nuts or cranberries before serving if desired.

Notes

  1. The salad gets even better after chilling the flavors blend beautifully and the texture improves.
  2. Dice the apples right before mixing to keep them fresh and bright; a squeeze of lemon also helps prevent browning.
  3. Blanching the broccoli is optional but gives a more vibrant color and slightly softer bite.
