  • 1/2 cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Pan: Line a baking sheet with parchment paper or lightly grease.
  2. Cook Sugar Mixture: In a medium saucepan, combine sugar, corn syrup, and water. Stir over medium heat until sugar dissolves. Clip a candy thermometer to the side. Cook without stirring until the mixture reaches 250°F (120°C) (soft-ball stage).
  3. Beat Egg Whites: While sugar cooks, beat egg whites in a large bowl until stiff peaks form.
  4. Combine Sugar & Egg Whites: Once sugar reaches 250°F, remove from heat. Slowly and carefully pour the hot syrup in a thin stream into the beaten egg whites, beating constantly.
  5. Add Flavor & Nuts: Beat in vanilla extract. Fold in chopped nuts if using. Continue beating until mixture is thick and glossy, about 3–5 minutes.
  6. Shape Candy: Drop spoonfuls onto prepared baking sheet. Let cool completely until set.
