  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini or button mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prep the chicken – Season chicken breasts with salt and pepper on both sides. Dredge in flour, shaking off any excess.
  2. Sear until golden – Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. Cook the mushrooms – In the same skillet, add sliced mushrooms. Sauté for about 5 minutes, until browned and tender.
  4. Deglaze with Marsala – Pour in the Marsala wine, scraping up the browned bits from the skillet. Simmer for 2 minutes to reduce slightly.
  5. Build the sauce – Add chicken broth and bring to a gentle simmer. Return chicken to the skillet and cook for another 5 minutes, letting the flavors meld.
  6. Garnish & serve – Sprinkle with fresh parsley and serve hot with your favorite sides.

  1. If your chicken breasts are thick, pound them to an even thickness for faster, more even cooking.
  2. Dry Marsala wine gives a savory, complex flavor, while sweet Marsala adds a touch of richness. Both work well—choose based on preference.
  3. For a thicker sauce, let it simmer uncovered for a few extra minutes before adding the chicken back in.
