  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream or half-and-half
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)
  • 8 oz rotini, penne, or any pasta (optional but recommended)

Instructions

  1. Add the chicken breasts, diced onion, garlic, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper to your slow cooker. Do not add the dairy yet.
  2. Cook on Low for 6–7 hours, or on High for 3–4 hours.
  3. Remove the chicken, shred with two forks, and return it to the crock pot.
  4. Stir in the heavy cream, grated Parmesan, and spinach (if using). Let it heat for 10–15 minutes until the cheese melts smoothly.
  5. For pasta: Option A (best texture) – Cook pasta separately, then stir into the soup before serving. Option B (all-in-one) – Add uncooked pasta to the crock pot during the last 20–25 minutes, until tender.
  6. Ladle the soup into bowls and top with extra Parmesan and fresh basil. Serve with garlic bread on the side.

Notes

  • For a richer flavor, use half-and-half instead of heavy cream.
  • Optionally, cook the pasta separately to preserve texture.
