  • 1 lb (450 g) Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup uncooked ditalini pasta
  • 1 can (14.5 oz / 410 g) diced tomatoes, drained
  • 2 cups fresh spinach or kale, roughly chopped
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage, breaking it apart with a spoon, and cook until browned and cooked through, about 5–6 minutes. Remove sausage and set aside, leaving some drippings in the pot.
  2. Add diced onion to the pot and sauté 3–4 minutes until translucent. Stir in garlic and cook 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil. Add ditalini pasta and cook according to package instructions until al dente.
  4. Return the cooked sausage to the pot along with drained diced tomatoes and chopped spinach or kale. Simmer 3–4 minutes until greens are wilted.
  5. Reduce heat to low and stir in heavy cream and grated Parmesan cheese. Mix until cheese is melted and the soup is creamy. Adjust seasoning with salt, pepper, and optional red pepper flakes.
  6. Ladle soup into bowls and top with extra Parmesan if desired. Serve hot with crusty bread.
