Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
- Beat in the egg and vanilla until fully combined.
- In a separate bowl, whisk together flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Scoop tablespoonfuls of dough onto the prepared baking sheet.
- Use your thumb or the back of a spoon to create a small well in each cookie.
- Fill each indentation with about ½ teaspoon of raspberry jam.
- Bake for 10–12 minutes, or until the edges are just lightly golden. The centers should remain soft.
- Allow cookies to cool on a wire rack and dust with powdered sugar if desired.
