Description

This Chicken Pot Pie Pasta combines the hearty comfort of a classic chicken pot pie with the ease of a creamy one-pan pasta dish. Loaded with tender chicken, wholesome veggies, and rich creamy sauce, it’s everything you love about pot pie without the crust! Perfect for busy weeknights or cozy weekends, this bowl of comfort will warm you from the inside out.

Ingredients

Scale
  • 3 boneless, skinless chicken breasts, diced
  • ½ yellow onion, diced
  • 1 tablespoon minced garlic
  • 12 ounces frozen mixed vegetables
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • ½ cup milk
  • 2 tablespoons butter
  • 1 tablespoon chicken bouillon powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 12 ounces egg noodles

Instructions

  1. Cook the pasta: In a large pot, cook egg noodles according to package directions. Drain and set aside.
  2. Cook the chicken: In a large skillet or Dutch oven, melt butter over medium heat. Add diced chicken and cook 5–7 minutes, until no longer pink.
  3. Add aromatics: Stir in onion and garlic; cook 3–4 minutes, until onion softens and becomes fragrant.
  4. Add veggies and seasoning: Add frozen mixed vegetables, chicken bouillon, paprika, salt, and pepper. Cook 2–3 minutes, letting the vegetables start to soften.
  5. Make it creamy: Stir in the cream of mushroom soup, cream of chicken soup, and milk. Simmer 5–7 minutes until smooth, creamy, and bubbling.
  6. Combine with noodles: Add cooked noodles to the sauce mixture, stirring to coat evenly. Cook another 2–3 minutes until heated through.
  7. Serve: Spoon into bowls and serve hot. Garnish with fresh parsley or a sprinkle of shredded cheese for extra indulgence.

Notes

  1. Consistency Control: If the sauce gets too thick, add a splash of milk or chicken broth to loosen it up.
  2. One-Pot Option: To minimize cleanup, cook the noodles directly in the sauce just add extra broth or water to help them cook through.
  3. Soup Substitute: If you prefer homemade, use your own cream of chicken or mushroom soup for fresher flavor and fewer preservatives.
