- 1 lb (450 g) ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 4 cups beef or vegetable broth
- 1 cup shredded cheddar cheese
- 1 cup milk (or cream for extra richness)
- 1 cup frozen corn (optional)
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 teaspoon paprika (optional)
- 2 green onions, sliced, for garnish
Instructions
- In a large pot or Dutch oven, melt 1 tablespoon butter over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
- Add the chopped onion and garlic to the beef. Cook 3–4 minutes until softened and fragrant.
- Stir in the diced potatoes, then pour in the broth. Bring to a boil, then reduce heat to a simmer. Cover and cook 15–20 minutes until potatoes are tender.
- Lower the heat and stir in the shredded cheddar cheese and milk. Mix until the cheese melts and the soup is creamy.
- Add salt, pepper, and paprika to taste. Stir in frozen corn if using, and cook 2–3 minutes more.
- Ladle soup into bowls and garnish with sliced green onions and extra shredded cheese if desired.
