  • 1 lb (450 g) ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 4 cups beef or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk (or cream for extra richness)
  • 1 cup frozen corn (optional)
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 teaspoon paprika (optional)
  • 2 green onions, sliced, for garnish

Instructions

  1. In a large pot or Dutch oven, melt 1 tablespoon butter over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  2. Add the chopped onion and garlic to the beef. Cook 3–4 minutes until softened and fragrant.
  3. Stir in the diced potatoes, then pour in the broth. Bring to a boil, then reduce heat to a simmer. Cover and cook 15–20 minutes until potatoes are tender.
  4. Lower the heat and stir in the shredded cheddar cheese and milk. Mix until the cheese melts and the soup is creamy.
  5. Add salt, pepper, and paprika to taste. Stir in frozen corn if using, and cook 2–3 minutes more.
  6. Ladle soup into bowls and garnish with sliced green onions and extra shredded cheese if desired.
