  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 teaspoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika (optional but recommended)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce or crushed tomatoes
  • 1½ cups uncooked elbow macaroni
  • 1 tablespoon Worcestershire sauce (optional but adds depth)
  • 1 bay leaf (optional)
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and green bell pepper. Cook for 4–5 minutes until softened. Stir in the garlic and cook for an additional 30 seconds.
  2. Add the ground beef to the pot, breaking it apart with a spoon. Cook until completely browned, about 6–8 minutes. Drain excess fat if necessary.
  3. Stir in the chili powder, oregano, paprika, salt, and black pepper. Cook for 1 minute to bloom the spices.
  4. Pour in the beef broth, diced tomatoes (with juices), and tomato sauce. Stir in the Worcestershire sauce and add the bay leaf if using. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes to develop flavor.
  6. Add the dry elbow macaroni to the pot. Continue simmering uncovered for 10–12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  7. Taste the soup and add more salt or pepper if needed. Remove the bay leaf.
  8. Ladle into bowls and garnish with chopped parsley or green onions.
