  • 1 cup smooth peanut butter (plus 1/4 cup for the optional filling)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • A pinch of sea salt

Instructions

  1. In a medium mixing bowl, combine 1 cup peanut butter, white sugar, brown sugar, egg, vanilla extract, baking soda, and sea salt.
  2. Stir until the mixture forms a smooth, thick dough and everything is fully incorporated.
  3. Scoop out portions of dough, about 1 tablespoon each, and roll into smooth balls between your palms.
  4. For filled cookies (optional), use your thumb to make a small indentation in each dough ball, add a little of the extra peanut butter, then gently close and roll again to seal.
  5. Line a small baking sheet or air fryer tray with parchment paper that fits inside your air fryer basket.
  6. Arrange the dough balls on the parchment, leaving a little space between them for slight spreading.
  7. Using a fork, gently press down on each ball in one direction, then again in a perpendicular direction to create the classic criss-cross pattern.
  8. Preheat the air fryer to 360°F (180°C) for a few minutes, if your model requires preheating.
  9. Place the tray in the air fryer and cook for 7–9 minutes, or until the edges are lightly golden and the tops look set.
  10. Carefully remove the tray from the air fryer. Do not move the cookies yet—they will be very soft.
  11. Let the cookies cool on the tray for about 10 minutes; they will firm up as they cool and become chewy and tender.
  12. Transfer to a rack to cool completely, or enjoy slightly warm for the ultimate peanut butter cookie experience.
