- 1 cup smooth peanut butter (plus 1/4 cup for the optional filling)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- A pinch of sea salt
Instructions
- In a medium mixing bowl, combine 1 cup peanut butter, white sugar, brown sugar, egg, vanilla extract, baking soda, and sea salt.
- Stir until the mixture forms a smooth, thick dough and everything is fully incorporated.
- Scoop out portions of dough, about 1 tablespoon each, and roll into smooth balls between your palms.
- For filled cookies (optional), use your thumb to make a small indentation in each dough ball, add a little of the extra peanut butter, then gently close and roll again to seal.
- Line a small baking sheet or air fryer tray with parchment paper that fits inside your air fryer basket.
- Arrange the dough balls on the parchment, leaving a little space between them for slight spreading.
- Using a fork, gently press down on each ball in one direction, then again in a perpendicular direction to create the classic criss-cross pattern.
- Preheat the air fryer to 360°F (180°C) for a few minutes, if your model requires preheating.
- Place the tray in the air fryer and cook for 7–9 minutes, or until the edges are lightly golden and the tops look set.
- Carefully remove the tray from the air fryer. Do not move the cookies yet—they will be very soft.
- Let the cookies cool on the tray for about 10 minutes; they will firm up as they cool and become chewy and tender.
- Transfer to a rack to cool completely, or enjoy slightly warm for the ultimate peanut butter cookie experience.
